Variants (Cocoa Nibs, Powder, Butter Wafers and Liquor wafers)

A cacao tree is born from a seed found in the cacao pod; the seed will not grow if it is dry. When the cacao tree grows it produces beautiful large leaves and cacao pods. These pods contain the beans used to make cacao nibs, cacao powder, wafers and more.

  • Cacao nibs are small pieces of crushed cacao beans — or cocoa beans — that have a bitter, chocolatey flavor.
  • Cacao powder is made from raw cacao beans and nibs that are fermented and then roasted. They’re then milled into a powder. They’re processed at much lower temperatures than the beans used to create cocoa powder, which is why cacao powder is quite bitter but retains more of the cacao bean’s original nutritional value.
  • The presentation in wafers allows us to work with it easily. We would only have to weigh it, melt it and then temper it, and/or apply it in our preparations.
